Pizza style baguette topped with spicy chicken and a creamy white sauce and finished with gooey mozzarella cheese. Delish!
These tasty appetizer are easy to prepare and bake and they make a nice party snack. They look soo appealing and pretty that your guests will love it.
I usually get my baguette fresh from this bakery named sable. Its just so perfectly fresh and delicious that when it is toasted to perfection you get a crunch on the outside and a soft, fresh bite on the inside.
These can be thrown together in a matter of minutes. You can assemble this before hand and place it in the oven just before serving.

For the chicken filling:
80g Chicken ( boiled in 1/2 tsp of pepper pdr, 1/4 tsp of turmeric pdr and salt and shredded)
1 small onion chopped
3 green chillies chopped
2 cloves garlic chopped
1″ ginger chopped
1/2 tsp oregano
1 tsp Pepper powder
3/4 tsp soya sauce
1/2 tsp green chilly sauce
1 tbsp parsley leaves chopped
Salt to taste
2 tbsp Oil
For the white sauce:
2tbsp butter
1/2 tbsp all purpose flour
1/2 cup milk
1/2 tsp pepper
Salt to taste
1 baguette/ french bread (small size)
Sliced olives
Pickled green chillies chopped
Shredded mozzarella cheese
Few thin slices of butter
Sweet chilly sauce or Nandos peri peri sauce
To make the filling:
- In a frying pan add the oil and sauté the onions, ginger, garlic, and green chillies for two mins.
- To this add pepper pdr, oregano and sauté for a minute.
- Add in the soya sauce and the green chilly sauce and sauté well. Shake in the salt.
- Throw in the shredded chicken and mix well to combine. Finally top it with parsely leaves.
To make the white sauce:
- In a pan melt the butter.
- Add in the flour and whisk well for a min.
- Pour in the milk and whisk really well to avoid formation of clumps.
- Throw in the salt and pepper.
- Whisk well until the sauce thickens a little bit and take them off the heat.
To assemble:
- Cut the baguette into thin rounds. Place them on a lined baking tray.
- Spread the sweet chilly sauce or the nandos sauce on top of each.
- Place the chicken filling on top.
- Add the pickled green chillies and olives.
- Add in a dollop of white sauce on each.
- Sprinkle the mozzarella and place the sliced butter on top.
Preheat the oven to 185 degrees. Push the pizza style baguettes into the oven and grill till the cheese melts well. Serve immediately.
Notes:
✔Try to get fresh baguette, otherwise it will be very hard.
✔ When making the white sauce, do not thicken it too much when on the stove. Because it will thicken by itself once it is off the heat. If the sauce is too thick, whisk in a little milk to get the right creamy consistency.
✔I used nandos sauce in half of my sliced baguettes and my fav sweet chilly sauce on the rest. If you prefer, you can use the normal tomato ketchup too.

You can keep them for a day. But if you keep it for long the bread might become soggy because of the white sauce. But i think i would be okay if you assemble everything and keep in advance, but bake at at the time of serving. Hop you will like this. Please lemme know if you have any more doubts.
