Roasted Chicken Legs

Roasted Chicken Leg Quarters is a dish that is easy to make, and it tastes like you spent hours on this dish. This dish is perfect for when you are running out of time, or even when you want something that will remind you of comfort food.

But unlike fried chicken legs, which while tasty, can often mask the true chicken flavor, these roasted legs simply allow the yummy chicken flavor to shine through.

For this one-pan dish, roast chicken legs on a bed of potatoes and other veggies like carrots, sweet potatoes etc. so the meaty juices keep the vegetables moist. I placed pita bread on the bottom and then the veggies and on top the chicken. Roasting chicken brings out the best in them by crisping its skin, juicing up its meat and lending every part a deliciously distinct flavor.

This delicious, mouth watering dish is my sister’s creation. My sister started cooking long back, i think during her school times itself. And i remember this was one recipe which i used to luuuuv since childhood. When she pops the chicken into the oven, the entire house used to be fragranced by the catchy smell of the chicken, butter, garlic. ‘Droool’! So since then when I do it up chicken leg style, this recipe is my all-time go-to method to cook them. These are what you call finger lickin’ good. Thanks ethatha for this amazing recipe. 🙂

Like how my sis serves, i too like to serve it alongside some cheesy, crispy garlic bread and french fries.

4 chicken leg quarters (skin on)
6-7 cloves garlic
3 green chillies
6 tbsp butter or olive oil
1/2 tsp oregano
1 1/2 tsp pepper
1 egg
Juice of half a lemon
Salt to taste

  1. Set the broiler temperature at 400F.
  2. Grind the garlic and green chilly into a paste and place in a bowl.
  3. Add in the melted butter or olive oil, followed by all the other ingredients.

4. Pour this marinade over the chicken pieces and spread this evenly over and under the skin very well. Marinate for about 3-4 hrs.

5. Just before roasting place 1-2 cloves of garlic and few cubes of butter under the skin. This will make the meat very moist and juicy.
6. Take a baking pan and place 2-3 pita bread at the bottom. Place the chicken along with few potatoes sliced in thick rounds. I added the left over marinade on the potatoes and mixed it well.

7. Bake the chicken, uncovered, for 35 to 40 minutes or until the chicken is no longer pink inside and the skin turns crisp. Don’t forget to turn the chicken once.

Notes:

✔ Chicken leg quarters means chicken legs along with thighs.
✔ Baking time may differ depending on the oven. So just keep checking if the chicken is done after 20 mins.
✔ I roasted the chicken in the convection microwave oven. It had an option for roasting chicken and it came out very crisp and juicy.
✔ Serve the chicken along with garlic bread, some salad or coleslaw and french fries.

  1. Thanks for sharing! I had bought seasoned chicken breast quarters to be grilled but decided to roast them on convection in my oven and was clueless on how long and what temperature to cook them. They turned out perfect and I can’t wait to try them with your seasoning.

  2. Hi! I was wondering if you leave the seeds in the chili’s and what kind of green chilli’s do you use? Does this end up being a pretty spicy dish? Thanks!

    1. Heyy Kassandra! I used the indian green chillies. You can basically use any sort of green chilly, and adjust the quantity depending on the level of spiciness you can bear. I did use the seeds too but was not super spicy. It was moderate spicy for us.

  3. Hi…my oven has till 250degree Celsius maximum….so how can I alter as u mentioned the temp is 400

      That was 400 degree Fahrenheit. You can keep at 250 degree Celsius. Actually you just have to grill it with the broiler on.
