This is my first rice recipe post in my blog. To be frank this was the first fried rice i made, ever. Otherwise i used to enjoy my mom’s or sister’s creations when i was back home in Dubai. From here, even though i always get to have fried rice from restaurants, i was missing the home-made stuff. But at the same time i was too scared to try my hands on making it by myself.
Then, one day i saw my friend Huda’s post of this delicious looking Schezwan fried rice on Instagram. It looked so good that i asked her for the recipe and she was sweet enough to give it to me the next minute. I made it the next day and it turned out really really good.
My husband who is usually not a big fan of fried rice liked it too, because it was very spicy. On top of that i added less veggies and more chicken (coz he doesn’t like munching on the veggies in fried rice), so he liked it more. 😉
So this rice definitely gets my stamp of approval, with honors. It is much better than the regular takeout. So you all definitely try out this one and let me know how you liked it.
Serves 2
Recipe adapted from: Kavya’s Kitchen
For Schezwan sauce:
10-12 Dry Red Chillies (Soak them in water for 1 hr and blend them to a smooth paste)
6 cloves Garlic (finely chopped)
1 tsp Grated Ginger
1 tsp Red Chilli Sauce(Store bought)
1/2 tsp Soya Sauce
1 tsp Vinegar
Salt:To Taste
Pepper Powder to taste
1/4 tsp Sugar
2 tsp Oil
Fried Rice:
1 Carrot (cut in juliennes)
1/2 cup Cabbage (finely shredded)
1/2 cup Capsicum ( cut in juliennes)
Chopped Spring Onions:3 tsp
2 cups Cooked Rice
Salt to Taste
Pepper Powder to Taste
2 tsp Broken Cashews
1/2 cup boiled and shredded Chicken
2 tbsp Oil
Schezwan Sauce:
1. Heat Oil in pan,when hot add the chopped garlic and grated ginger,fry till garlic turn golden color.
2. Add in the red chilly paste and fry till the mixture leaves oil,now add salt and pepper to taste.
3. Add sugar,vinegar,soya sauce and red chilli sauce and mix well.Add jst 1/4 cup of water if the mixture is too dry.Cook for 5-7 minutes and let it cool,store it in a bottle and refrigerate and use when needed.
Consistency of the sauce has to be like the beaten curd.U can add water later while preparing the dish.
Schezwan Fried Rice:
1.Heat oil in a pan,add broken cashew nuts and fry them till light golden color,then add the spring onions, carrot, cabbage, mix and sprinkle little salt,cook them covered for 2 mins and then fry them till done. Add the chicken.
2.Now add half of the prepared schezwan sauce,mix well,sprinkle some water if needed,so that the sauce is evenly coated to all the vegetables. Fry them together for 2 mins and then add the sliced capsicum and continue frying for another 2 mins, finally add the cooked rice,mix evenly and sprinkle some pepper powder and salt to taste.
3. Toss and serve hot.
Notes:
✔️ If you want to make it purely vegetarian, just omit the chicken. You can add beans, peas etc.
✔️ Paneer can also be added.
✔️ While preparing the Schezwan sauce, try to remove the seeds from the dried red chillies. At least from few of them. Remove and then soak in water.
✔️ We had it with sweet and spicy chicken fry and it turned out to be a heavenly combination. As the rice by itself is so flavorful, you wouldn’t need any gravy so this fry was perfect.

I have never made Schezwan fried rice from scratch. Your recipe is so easy and all ingredients are very easily available in my home. I will make this soon!

Thanks Hazna! With the left over sauce you can make schezwan chicken lollipop or freeze it and use it the next time you make fried rice. 😀
