Whoaa!! Its been a year since the novice gardener, Angie started conducting the fun filled Fiesta Friday. Congratulations sweetie! You have done an amazing job. So much hard work and dedication you have put in this.
Fiesta friday is a virtual party where different bloggers share their lives, laughter, and amazing food creations. Its soo much fun to see what each of them has brought to the party, as there will be a wide variety of food. You can learn so much about cuisines from different parts of the world. My fav part is mingling with other bloggers and trying out their recipes myself. I made so many amazingly sweet friends through this party.
Angie has maintained such a warm and inviting atmosphere in the party that i look forward to attending it every week. It really feels like i knew Angie personally for a long time, thats how comfortable she makes us feel.
Today, i am gonna take a large batch of yummy almond chocolate pie to the party. Im sure everyone will enjoy this crowd pleaser dish after having the wide range of main dishes which other friends have brought to todays party.
This pie is super delicious. The combination of almond and chocolate on the flaky pie crust is simply awesome. Im not saying anything more about this dish, just try it yourself and see. Im sure you all will love it.
Chocolate Almond Pie
Ingredients
INGREDIENTS
- Serves 5
- 6 oz semi sweet Chocolate
- Sliced almonds or powdered sugar for decoration
for Almond Cream
- 2 cups of raw almonds 250g
- 3/4 cup granulated sugar 160g
- 1/2 cup of softened butter 110g
- 1 pinch of salt
- 1 tsp vanilla extract
- 2 eggs
- 1/2 cup powdered sugar 60g
For the Pie Crust
- 1 1/4 cup all purpose flour 150g
- 1 pinch of salt
- 1/2 cup frozen butter 110g
- 3 1/2 Tbsp ice cold water
- 1 Tbsp apple cider vinegar pr normal white vinegar
Instructions
DIRECTIONS
For the almond cream
- Soak the almonds in boiling water for 10-15 minutes. Remove the skin.
- Grind the almonds and sugar in a food processor.
- In a large bowl, beat the softened butter with salt and vanilla till creamy. Add the almond mixture along with 1 egg at a time.
- Add the powdered sugar.
- Set aside
For the crust
- Take the flour into a bowl and grate in the frozen butter. Add salt and water. Add vinegar.
- Press the mixture together to form a ball. No need to knead extensively.
- Sprinkle flour on working surface and roll out the dough into a 1/8 inch thickness.
- Place in a 9 inch pie dish.
Assembly
- Add the chopped chocolate on the crust. Pour the almond cream. Sprinkle sliced almonds.
- Bake at 400F for 10 minutes and then reduce temperature to 350 F and bake for another 30 minutes. Leave the pie in the oven until completely cooled. Make sure the pie is well baked from inside.
