Spicy Indian Style Red Chicken Curry


I love to cook, i do. I dream about food, i really do. But thinking of what to make for dinner everyday makes me want to run away from all this and never come back. Dinner time is really hard.


Cooking lunch and dinner with an active toddler makes it a little hard. Wonder how people with three, four, or more kids get their work done in the kitchen. Hats off to you ladies! Claps claps for you!


What i do to deal with this situation is make a meal plan for one whole week. For me Saturday is a “no cooking” day. Kitchen is closed that day, ah! I so love Saturdays. So i plan the menu for the coming days on this day. Do any grocery items needed for it and keep things ready. Meal planning is a great way to save time and money. If you have never tried this before, you should do it too. It removes so much stress.


Ok coming to today’s recipe, i was simply watching videos on youtube (my absolute favorite pastime) and i came across this very tempting and beautiful indian red curry in this channel named food junction. It looked soo good that i wanted to scoop out some curry with a nice, soft naan from the screen.


It was really good. So i went to the kitchen, put on my apron and cooked this beauty, red beauty. Hehe! I made a few changes to the recipe though. So here goes the recipe. Hope you all like it. Enjoyy!

 

Ingredients:

For marination:

  • 600g chicken
  • 2 tsp kashmiri red chilli powder
  • 1/2 tsp garam masala powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp cumin powder
  • 4 tbsp yoghurt
  • 2 tsp garlic paste
  • 1 tsp ginger paste
  • Salt to taste

Other ingredients:

  • 2 onions chopped
  • 4-5 dry kashmiri red chillies
  • 4 cloves garlic
  • Coriander leaves
  • 1 cup water
  • Vegetable oil/ ghee

NOTES:

✔️ Use Kashmiri dried chillies for grinding. The other type red chilli will be very very spicy.

Method:

  1.   Marinate the chicken with the above mentioned ingredients for half an hour.
  2. In a heavy bottom pan heat some oil and add in the onions. Sauté till golden brown and soft.
  3. Add in the chicken with the marinade along with a half cup of water. Let it come to boil no high flame. Reduce heat to low and cook with lid on till chicken is done. It may take 20 minutes.
  4. Meanwhile grind the dried red chilli and garlic cloves to a smooth paste. Keep aside.
  5. After 20 minutes open the lid, if there is lots of gravy, increase heat and let te gravy get thick.
  6.   Add in the ground masala along with half cup of water. Cook for another 10 minutes to remove the raw smell of the red chilli and garlic.
  7. Add in coriander leaves. Check salt and add if needed.
  8. Serve.

 

SPICY INDIAN STYLE RED CHICKEN CURRY

A spicy Indian chicken curry with a red colour from the Kashmiri chilli.

      Just a doubt, is the gravy thick or runny?? How does this thicken??

      1. Hey Aparna! Really happy to know that you like the blog.
        The gravy will be thick in this curry. It thickens because of the red chilly paste and also because you have to reduce the gravy on high heat at one point in the recipe.
