Chicken Alfredo Pasta

So here i am with another pasta recipe, not just any pasta….its Chicken Alfredo Pasta.

I used Fettuccine pasta for this, which is used while making Alfredo pasta traditionally. I always feel that fettuccine tastes its best when served in a rich and creamy Parmesan cheese sauce made with real cream and butter. You can use any sort of pasta actually, any shape or any type (whole wheat, gluten-free etc).

I  do not make this very often even though a good Alfredo has always been my favorite. It might not be the healthiest dish, but it’s soo yummy. 🙂

I grilled the chicken breast with lots of flavorful spices. Ah! the aroma when grilling the chicken was just unbearable, my husband was like, ‘forget the pasta, we will just have the grilled chicken’ because he seriously couldn’t wait. 😀 But he gave this pasta an A+ after tasting it, even though he is not an ardent pasta fan. 🙂

I used bell peppers, onion, green onions, garlic and some of my favorite spices while making the sauce. Along with that, to get a thick and creamy sauce I added three types of cheese-parmesan, cheddar and feta cheese. The combination of these three cheeses with the cream and butter was just too good. This glossy, thick alfredo sauce sticks to all the nooks and crevices of the fettucini making it taste awesome. Do try it. Here goes the recipe:

Ingredients:

For the chicken breast:

  • 400 g chickens breast, boneless, skinless
  • 1 tsp cajun spice
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp black pepper powder
  • 1 tsp Lemon juice
  • 1 tsp garlic paste
  • 2 tbsp yoghurt
  • Salt to taste

For the Alfredo Sauce:

  • 1 red bell pepper/ capsicum
  • 1/2 red onion chopped
  • 3 white part of green onion chopped
  • 4 cloves garlic
  • 1 tsp black pepper
  • 1 tsp cajun spice
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 cup cream
  • 1/4 cup milk
  • 1/4 cup parmesan cheese 
  • 1/2 cup cheddar cheese 
  • 1/4 cup crumbled feta cheese
  • 25g butter
  • Parsley 
  • Olive oil

350 g fettuccine

NOTES:

✔️ Be very careful when adding salt to the Alfredo sauce because the parmesan cheese, feta cheese and cajun n spice will have salt in it. 

✔️ If you don’t want to grill full chicken breast, just use cooked shredded chicken and mix in with the sauce. 

Method:

For the chicken:

  1. Marinate the chicken pieces with all the ingredients listed under marination and keep for 2-4 hours or best if kept overnight. 
  2. Grill the chicken for about 8 minutes per side till well cooked. 


To make the Alfredo sauce:

  1. img_9608Cook the pasta according to package directions, drain and rinse with warm water. Drain again and add olive oil to coat the pasta to prevent it from sticking.  
  2. In a pot add olive oil and when it heats up add in the red and green onions. Sauté till it turns soft. Add in the garlic. Mix for a minute. 
  3. Next add in capsicum and cook for 2 minutes. 
  4. img_9609Add in all the spices. And sauté for a minute. 
  5. Pour in milk and cream whisking well. Cook for a minute. 
  6. img_9610Add all the cheeses and let simmer on low heat for 5 minutes. 
  7. Add parsley and salt (check notes). Add in butter. 
  8. Toss the pasta into this very well and cover and cook for 3 minutes. 
  9. Serve with sliced grilled chicken and some extra grated parmesan cheese. 
  10. Serve hot.

        1. Thanks a lot Ranjeeta! We get cajun spice very easily here in Dubai and Kuwait. Don’t know if it is easily available in India. But you can get it online.

          Cajun spice is easily available in most of the hypermarkets in Dubai. Try carrefour, lulu or spinneys. They will have it. I have used cooking cream here.
