Biscuit Crunch Pudding

You all, how can I emphasize to you that this BISCUIT CRUNCH PUDDING is one dessert that you have to…HAVE TO make immediately. Don’t have any sort of doubt in your mind if you will like this or no. I get the feeling that this is soon going to be each of your faav pudding.

This is my top favourite at the moment. Like, I wish I had made more of this because it ended up being such a hit and I literally couldn’t stop eating it. The people I made this for couldn’t stop eating too. It was all gone in a jiffy. 😀 And that made me very happy.

I have used my favourite lotus biscoff cookies in this. Its getting viral all over the middle east now. So it is easily available here. But if you don’t get it in your place you can use any other sweet cookie. You can use chocolate cookies too. If you really love chocolate flavour, you can mix in Nutella in one of the layers of cream.

So here is the recipe for you. Enjoy! 🙂

 

INGREDIENTS:

For the crunch part:

  • 1 handful of almonds crushed (not powdered)
  • 15 lotus/ Hide and seek biscuits
  • 4 slices bread (sides removed and tear into small pieces with hand)
  • 25g butter

For the Cream:

  • 2 sachet dream whip powder
  • 1 1/2 tin nestle cream
  • 2 tbsp sweetened condensed milk
  • 1/4 cup milk

NOTES:

  • Lotus biscuits tastes best in this. But you can substitute it with hide and seek biscuits or good day biscuits if lotus biscuits are not available in your place.
  • Instead of the dream whip powder, you can use whipping cream. In that case don’t use the milk and increase the amount of sweetened condensed milk. 

DIRECTIONS:

To make the crunch part:

  1. Photo Apr 14, 5 18 24 PMIn a pan, melt the butter and add in the almonds. Stir it for a minute.
  2. Then add in the bread and crushed biscuits.
  3. Roast it for about 15 minutes till everything gets crispy.

To make the cream layer:

  1. Photo Apr 14, 10 18 58 AMBeat the dream whip powder in milk.
  2. Add in the condensed milk and cream and beat again till creamy.
  3. Divide the whipped cream into two parts.
  4. Photo Apr 14, 10 19 33 AMIn one half add in half of the crushed biscuits.
  5. Leave the other half plain.

Layering:

  1. Photo Apr 14, 10 24 56 AMIn a tray spread a little roasted nut, bread, biscuit mixture as base.
  2. Then add in the plain dream whip mix.
  3. Again a layer of roasted mix.
  4. Then spread a layer of the biscuit and dream whip mixture.
  5. Finally again a layer of the roasted mix.

Refrigerate for 3-4 hours. Serve cold.

      Digestive biscuits wouldn’t taste very good in this. Would hide and seek biscuits be available where you stay? Glucose biscuits would be okay too I feel. Didn’t try with it though.

      Thanks dear. Instead of dream whip powder, use whipping cream. But then you don’t have to use the 1/4 cup of milk. Instead use 1/4 cup of whipping cream, whip it up till firm, then follow the remaining procedure as it is. The other thing you have to keep in mind is that dream whip powder has sugar in it, that is why I added just few tablespoons of sweetened condensed milk. But as whipping cream is unsweetened adjust the sweetness according to your preference.

  2. Hi Sadia, A little confusion here. In the beginning you roast only half of the crushed biscuits and use the remaining with whipped cream? or you crush another set of biscuits for the whipping cream later?

      You have to use half crushed biscuits in whipping cream and the other half while roasting.

  3. Hi Sadia ! Will the cream melt if I keep the pudding outside for long? I’m planning to make this pudding for a party which is outdoor ..obviously desserts are served last! I hope it’s not going to be a flop?

    1. Hey Rini. Yes dear, it will melt a bit if you keep it out for that long. A cake would be the best thing to take to a picnic especially in this summer time.

  12. Awww.. Sheesh I followed recipe and added the full crushed biscuit in the roasting mixture. It didn’t say to keep half the crushed biscuit aside for the whipped cream.. While I was doing it I realised u mentioned it again, n den i reached comments section. I..

    Sorry, the comment wasnt complete. i was reading recipe while doing it.. so as i said i added the whole crushed biscuit into cream mixture,.
    Anyways, the pudding turned out a great hit, as it wasn’t very sweet , but just perfect. So ppl asked for second serving
    Only thing was that cos of the extra biscuit in cream mixture, it wasn’t as creamy , turned little dry – but still yumm.. my mom who usually doesn’t enjoy sweets much, ensured to ask me to pack a little extra for her to take back home. So definitely approved.
