Valayappam/ Funnel Cake/ Kaiveeshal

Valayappam/ Funnel Cakes are deep fried pancake like batter topped with powdered sugar.

Hey! Here I am, late as usual with the first post of 2019. Hope this year started off well for you all. Mine was amazing as I was with my family in Dubai for new years. 🙂 Now I am back in Kuwait and I am sharing with you an easy recipe of this traditional dish named Valayappam/ Funnel Cake/ Kaiveeshal.

This is one dish that would be there in most wedding houses back in Kannur, Kerala. Usually during wedding time, the ladies prepare a whole lot of snacks to serve to the numerous guests who come over to visit, which usually starts about a week before the wedding.

There is a huge list of appams or snacks that are prepared, this is one of them and it’s my favorite. But I love it more when it is freshly fried and warm. The pancake like batter is pretty basic but once fried, is crispy on the outside and soft on the inside, just like how a good funnel cake should be. 

My mom in law is an expert at this and this was prepared by her. It tasted soo yummy, that I made her prepare it again for the blog. Thank you uma for this amazing recipe. <3 Hope you all will give it a try.

INGREDIENTS:

  • 4 tbsp sugar
  • 3 large eggs
  • 1/2-1 tsp cardamom powder
  • pinch of salt
  • 1/2 tsp baking powder
  • a little less than 3/4 cup flour ( measure 3/4 cup and take out 2 tbsp of flour and use remaining)
  • oil for deep frying
  • powdered sugar

NOTES:

  • Traditionally the batter is poured through the fingers and that is why some people call it kaiveeshal (kai-hand) :).
  • My mom pours the batter through the hole of a coconut shell. For that take an empty coconut shell (scrape off the coconut flesh) and with a knife make the already present hole on the shell bigger.
  • When you are using a funnel, the appam/ funnel cake won’t be so thick. But that’s okay too, by using the narrow tip of a funnel will give you crisp funnel cakes. 
  • Piping bags or squirt bottles can be used too.
  • In our place we add cardamom powder for the authentic taste instead of vanilla essence. You can add either as per your liking.

DIRECTIONS:

  1. In a blender add eggs, sugar, cardamom and salt and blend till well combined. You can a hand mixer too.
  2. In a bowl, add baking powder and flour. Mix. 
  3. Pour the blended mix into this.
  4. Mix well using a whisk. There shouldn’t be any lumps present.
  5. Keep for half an hour.
  6. Heat a pot over medium high heat with vegetable oil for deep frying.When the oil is hot, pour the batter through a funnel.
  7. Try pouring in a coil shape or in a circle like shown in the picture. 
  8. Cook for 1.5 minute on one side, then flip and cook for a minute on the other side. Depending on your oil temperature this might vary a little.
  9. Once cooked, place on wire rack, let it cool slightly. Continue with remaining batter. Dust with powdered sugar and enjoy.

    Oh dear… U just made me remember my beloved mom… I loved kaiveeshal… Absolutely loved the way it used to turn out… Just like u put it… Crispy on the outside n soft on the inside… Recently I had wondered whether will I ever get to have a kaiveeshal that tastes the same?… I never bothered to note down the recipe… Just relished it whenever she made it… ❤…

    If only we could turn back time n RE-live all those precious moments…
