A very delicious, moist Coconut Cake, all the ingredient measurements are easy to remember. Fast, easy and so good. The perfect breakfast, snack or dessert recipe.
I tried this cake a while back after I saw it in an Arab lady’s Instagram page. The recipe was completely written in Arabic but with the little understanding I have of the language, I figured out the recipe somehow. But it was a very straight forward recipe, all the ingredients are in 1 cup measurements, so it was easy to take meaning.
You just have to make it once and then you wouldn’t need to open the page again for the recipe, it’s that simple to remember.
I made a YouTube video after a long long time. One of the new year resolutions I made was to post more in my YouTube channel. So I started with this easy cake and I had a lot of fun shooting it. Please do check it out and subscribe to my channel if you have not already.
INGREDIENTS:
- 3 eggs
- 1 cup yoghurt
- 1 cup sugar
- 1 cup oil
- 1 tsp vanilla essence
- 1 cup flour
- 1 tbsp baking powder
- 1 cup desiccated coconut
DIRECTIONS:
- In a blender jar add eggs, yoghurt, sugar, oil and vanilla. Blend well till combined.
- In a bowl sift together flour and baking powder. Add in coconut. Mix.
- Pour the blended mixture into the flour mix. Fold it in.
- Pour the batter into a greased and flour 13 x 9 x 2 inches pan and bake for 35-40 minutes at 180C.
Can v use butter instead of oil and fresh coconut instead of desscated ones?
I have not tried with this substitution Muhsi. So I cannot exactly tell how it will turn out.

Can we use fresh coconut
Hi, dessicated coconut would be better as I don’t certainly know how the cake would turn out with freshly grated one.

Yes, you cannot skip that.

Hello! So sorry for the late reply. I used regular yoghurt. But you can use greek yoghurt as well.
Very delicious!! I used regular sugared coconut. And half butter half coconut oil melted. And I also used coconut extract. And vanilla yogurt (what I had on hand). I topped with a coconut flavored glaze and coconut flakes. Super good. Thank you.

You can use a 9 inch round pan.
