Edible Gifts 3- Pancake Mix in a Jar

Homemade pancakes are pretty much everyone’s favorite. What is even better is homemade pancakes from a homemade pancake mix. Show your foodie friends and loved ones that you care by giving them this pancake mix that they will truly enjoy.

Making pancake from scratch is not a tough job. But if you have a pancake mix with the correct ratios of dry ingredients, you can just scoop some mix, add eggs, milk, butter and voila, you have your batter ready quicker.

With this batter, you can make waffles too. To be honest, the waffles turn out just okay but the pancakes are awesome. This is definitely better than boxed pancake mix and would make a perfect gift.

Pancake/ Waffle Mix

Ingredients
  

To make the Dry Mix:

  • 4 cups all purpose flour
  • ½ cup sugar
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • ¾ tsp salt

To make Pancakes:

  • 1 cup dry mix
  • 1 large egg (about 60g)
  • ¾ cup milk
  • 3 tbsp melted butter
  • ½ tsp vanilla essence

To make Waffles:

  • 1 cup dry mix
  • 1 large egg
  • ½ cup milk
  • 2 tbsp melted butter
  • ½ tsp vanilla essence

Instructions
 

To make the dry mix

  • Add all the ingredients for the dry mix through a sifter into a bowl. It would good to sift it twice.
  • Store it in a glass jar for upto 1 month.

To make the pancake: (6-8 pancakes)

  • Whisk together egg, milk, vanilla and butter.
  • Drop in a cup of dry mix and mix well until combined.
  • Let the batter rest for 10-15 minutes.
  • Heat a frying pan, add butter and pour ladle full of the pancake batter in it.
  • Let it cook on medium low heat until you see bubbles on top.
  • Flip it and cook on the other side.

To make waffles: (4 waffles)

  • Whisk together egg, milk, vanilla and butter.
  • Drop in a cup of dry mix and mixwell to combine. If the batter is too thick pour few tablespoon more of milk. It should be as thick as a basic cake batter.
  • Grease the waffle iron and pour spoonful of the batter.
  • Cook the waffles according to your waffle machine directions.
