Ingredients
For Butter Chicken Filling:
for marination:
- 400 Grams chicken thighs boneless
- 2 Tsp red chilli powder
- ¼ Tsp garam masala powder
- 1 Tsp paprika powder
- 2 Tbsp yoghurt
- salt to taste
- 1 Tsp garlic powder
- 1 Cube butter
other ingredients:
- 1 Cube butter
- vegetable oil
- 1 Medium onion chopped
- 1 ½ Tsp ginger garlic paste
- ½ Tsp red chilli powder
- ¼ Tsp turmeric powder
- ¼ Tsp garam masala powder
- ¼ Tsp cumin powder
- 1 Tsp sugar
- 2 Tbsp tomato paste
- 3 Tbsp cooking cream
- salt
- coriander leaves chopped
for the bread dough:
- 250 Grams all purpose flour
- 1 Tsp instant yeast
- 1 Tsp salt
- 42 Grams unsalted softened butter
- 1 Large egg
- 3 Tbsp sugar
- ½ Cup warm milk
- extra melted butter for brushing on buns after baking
for the sauce:
- ½ Cup plain mayonnaise
- 2-3 Tbsp sriracha chilli sauce
- 1 Tbsp honey
- ¼ Tsp mustard
- 1 Tbsp milk
Instructions
to make butter chicken filling:
- Cut the chicken into small cubes. Marinate it with the above listed ingredients. Shallow fry it till cooked well and charred on the outside.
- In a pan, heat the butter. Add the chopped onions to it and sauté till it turns brown. Add in the ginger garlic paste. Stir and cook for a minute.
- Next put the red chilli powder, turmeric powder, garam masala powder, and sugar. Cook for a minute on low heat.
- Add the tomato paste and cook for 2-3 minutes till the raw smell goes. Four 1/4 cup or water. cooK again till water dries
- Add in the cooked chicken, mix well. Pour 1/4 cup of water again.
- Cover and cook for 5-6 minutes. By now the water will have turned into a beautiful thick gravy.
- There shouldn't be a lot of gravy as you are going to use this as a filling, so cook till gravy reduces. Pour the cream. Mix well. Add in coriander leaves.
to made the bread dough:
- In a bowl, add all the ingredients and knead well until you get a smooth dough.I kneaded it for 8 minutes in the stand mixer with dough hook attachment. You can knead with hand too.Place in an oiled bowl and let it rise for 2 hours until doubled in size.
to make the sauce:
- mix all the ingredients together in a bowl.
to assemble:
- Punch down the risen dough and take small lemon sized dough balls and flatten it with your hand or with a roller.
- place the chicken filling in the middle and fold it in half without sealing the edges.
- Place each chicken filled dough on a lined baking tray.
- Do not pack the bread dough too tightly or else it wont get cooked all the way through.
- Once assembled, let it rise again for half an hour
- Bake in a preheated oven for about 20-25 minutes until the bread gets cooked completely.
- Once out of the oven, brush melted butter generously.
- Drizzle prepared sauce all over and serve
