Dumplings with Umami flavored spicy chicken filling served with flavor packed chilli oil. There is also a recipe for homemade dumpling wrapper which turns out amazingly good everytime.
Dumplings with Chilli Oil
Ingredients
For Chicken Filling:
- 400 Grams Chicken mince
- 2 Green chillies
- 2 Tsp Ginger garlic paste
- 4-5 Spring onion Chopped
- 1 Tsp Sesame oil
- 3 Tsp Soya sauce
- 1/2 Tsp Salt
- Black pepper
- 1½ Tsp Red chilli flakes
- Chopped coriander leaves
For dough:
- 2 Cups Plain flour
- Salt
- ¾ Cup Warm water Approx
For the chilli oil:
- 4 Garlic Chopped
- 1 Tsp Sesame oil
- ½ Chicken stock cube
- 1 Tsp Rice vinegar
- 1 Tbsp Chilli flakes
- 1 Tsp red chilli powder
- 1 Tbsp Soya sauce
- Coriander levaes
- 80 Ml Sesame oil
Instructions
To make filling:
- Combine all ingredients.
To make dough:
- Add flour and salt into a bowl and pour warm water gradually and make a semi soft dough.
- Let it rest for half an hour.
To make chilli oil:
- Add all ingredients except sesame oil in a bowl.
- Heat the oil and pour it onto the ingredients.
- It will sizzle and chilli oil is ready.
To assemble:
- Roll the dough until it is paper thin and cut into squares or rounds.
- Add filling in middle and close the dough by gathering the sides and closing it like a pouch.
To cook dumplings:
- Steam the dumplings for about 15 minutes.
- Add little oil in a pan and on high flame add the the steamed dumplings into it. POur a tbsp of water and close the lid and let it fry on high flame until the bottom turns crispy.
- Serve hot with chilli oil
