Chocolate Filled Pappa Roti/ Coffee buns

Papa Roti buns, also known as Mexican coffee buns, are exceptionally soft buns characterized by their tantalizing aroma. When you take a bite into the warm bun, you’re greeted with a satisfying crunch from the sweet, caramelized coffee topping that melts like butter in your mouth. Traditionally, Papa Roti buns have a warm, slightly salty butter filling inside the fluffy bun. However, in my version, I chose to fill them with delicious chocolate spread, making them irresistibly yummy.

Papa Roti or Mexican coffee buns were a craze a few years ago in the UAE, and the Papa Roti stores are still thriving across the region. While the stores in Kuwait’s Avenues mall had closed down, I recently heard the exciting news that they are reopening in various locations in Kuwait. For those of you who haven’t had the chance to taste these buns, you’re in for a treat. They are truly exceptional and worth the hype.

Chocolate Filled Pappa Roti

Ingredients
  

For buns:

  • 400 Grams All purpose flour
  • 50 Grams Sugar ¼ Cup
  • 1 Tsp Salt
  • 1 Tbsp Instant Yeast
  • 1 Whole Egg
  • 1 Egg yolk
  • 1 Cup Warm milk
  • 50 Grams Butter Softened
  • chocolate spread

For Coffee Butter

  • ¾ Cup All purpose flour
  • ¾ Cup Powdered sugar
  • 1 Egg
  • 90 Grams Butter Softened
  • 1 Tbsp Instant coffee Mixed in 1 tbsp hot water

Instructions
 

  • In a stand mixer add flour, sugar, yeast, eggs, and warm milk and just briefly mix it.
  • Add salt and knead for 2-3 minutes
  • Add softened butter and knead for 6-8 minutes until the dough turns elastic.
  • Let the dough rise in a warm place until doubled in size.

To make coffee cream:

  • In a bowl add butter and whisk, add sugar and whisk together. Add egg and mix. Then add coffee and combine, finally add flour and the coffee butter is ready. Transfer this into a piping bag.

To assemble:

  • Make small balls (each about 36 grams weight) and keep on a lined baking tray.
  • Pipe the coffee cream on top in swirls as shown in video.
  • Bake at 180 c preheated oven for 16-18 minutes.
  • Make a hole in the side of the bun and fill it with chocolate spread and serve.
