Meat lovers, u wont miss the meat if you have this terrific grilled vegetable and cheese sandwich.
Besides all the veggies- eggplant, potatoes, mushrooms( is it actually a veggie? :s) this sandwich has got two other components which will enhance the taste. They are hummus and garlic sauce ( toum sauce). Moreover, you can never go wrong with some good cheese. I used mozzarella. The gooey melted mozzarella cheese adds richness to this delicious vegetarian sandwich. This sandwich is quite substantial and filling.
Actually i am not a big fan of veggies. This recipe is my sisters creation. She had sent me the recipe and asked me to try this one out. I was least interested to make this at first, but to her compulsion i made it. And thank God i made it, coz i luuuved it, my husband loved it too who is a big time veggie hater.
If you are a veggie fan or not, do try this one out and I’m sure you guys will rave about the simply fabulous flavor of this hearty grilled veggie sandwich.

Makes around 4 sandwiches
1 Potato – sliced into thin rounds
1 Eggplant – sliced into thin rounds
10 mushrooms – sliced thinly
1 tsp chilly powder
1 tsp garlic powder
3 tbsp olive oil
Salt to taste
Bread slices
Hummus
Garlic sauce
Pizza sauce or sweet chilly sauce
Sliced olives
Parsley leaves – chopped
Jalapeño or pickled chilly
Pickled veggies
Shredded mozzarella cheese
- Marinate the eggplant and potatoes in chilly powder, garlic powder, 1 tbsp olive oil and salt.
- Heat 2tbsp olive oil in a pan, and shallow fry the marinated eggplant and potatoes.
- Once done remove from pan and sauté the mushrooms till the water dries up.
- Place the bread and spread the hummus and garlic sauce on one side and the pizza sauce/ sweet chilly sauce on the other.
- Place the cooked vegetables on the bread, then add the pickled chillies and veggies.
- Then add the parsley, olives and the shredded mozzarella.
- Place the other slice on top and toast either in a sandwich maker or on a pan. For the latter, add a few drops of olive oil onto the pan and grill the sandwich on both sides on low heat.
- Serve hot.
Notes:
I have used white bread in these sandwiches. But you can use any bread that you like. I guess soft whole wheat bread would work great as well.
Grill the sandwich just before serving to get the crunchy texture.
The amount of grilled vegetables you want to add in each sandwich is based upon personal preferences, i prefer using little less.
