Besides all the veggies- eggplant, potatoes, mushrooms( is it actually a veggie? :s) this sandwich has got two other components which will enhance the taste. They are hummus and garlic sauce ( toum sauce). Moreover, you can never go wrong with some good cheese. I used mozzarella. The gooey melted mozzarella cheese adds richness to this delicious vegetarian sandwich. This sandwich is quite substantial and filling.

Actually i am not a big fan of veggies. This recipe is my sisters creation. She had sent me the recipe and asked me to try this one out. I was least interested to make this at first, but to her compulsion i made it. And thank God i made it, coz i luuuved it, my husband loved it too who is a big time veggie hater.

Notes:

✔I have used white bread in these sandwiches. But you can use any bread that you like. I guess soft whole wheat bread would work great as well.
✔Grill the sandwich just before serving to get the crunchy texture.
✔ The amount of grilled vegetables you want to add in each sandwich is based upon personal preferences, i prefer using little less.
