Fresh Peach Lemonade

On hot hot summers days like this, a glass of icy cold peach lemonade is a perfect thirst quencher. Peaches are one of the most delectable summer fruits. It is apt for mixed drinks, as its flavor pairs very well with many other flavors. But its the peach nectar alone which gives the signature summertime drink.

I had lots of peaches lying in my fridge. So this was the best way i could use up the abundance of peaches.

You can have it as it is by mixing in some cold water or add lemon juice, as i did. You can also add soda or sparkling water to get that punch.

The colder this drink is served in summer, the more refreshing and sought after it will be.

3 cups fresh peaches, diced
Zest of 3 lemons
1½ cups sugar
6 cups cold water or sparkling water, divided
1 or 1/2 cup fresh lemon juice
Garnish (peach slices, lemon slices, mint)

1. In a large saucepan over medium heat, add diced peaches, lemon zest, sugar and 2 cups of water. Stir to dissolve sugar and let mixture simmer. (do not boil, reduce heat if needed)

2. When peaches are very soft, mash them with a potato masher or fork to break them up.
3. Let mixture simmer until it thickens slightly.
4. Remove from heat and let cool.
5. Strain the peach syrup mixture into a bowl and discard the solids.
6. Add the lemon juice to the peach mixture.
7. Pour into a container along with 4 cups of water or sparkling water.

8. Refrigerate until cold if desired.
9. Fill glasses with ice. Fill with peach lemonade.
10. Garnish with fresh peach slices, fresh lemon slices and mint.
Serve immediately

Notes:
✔Make sure that the mixture cools before adding it to the container.
✔I added a little soda water to the peach lemonade. If adding soda don’t add more soda and less of the juice, it should be the other way.
